Bacon Chocolate Chip Cookies

I know the bacon-chocolate thing is starting to get a little cliché. If you're the adventurous type you've probably tried it by now, and if you're not, well you're still not convinced and you're probably just not going to be. And that's ok. But if you did try it, and you want more of that salty sweet combination, make these Bacon Chocolate Chip Cookies. It's just the right amount of comfort food what's more comforting than a warm, chocolate chip cookie?) and adventure especially if you go for the extra punch with a nice smoky bacon).

Bacon Chocolate Chip Cookies

1 cup butter, softened
2/3 cup sugar
2/3 cup packed dark brown sugar
1 teaspoon vanilla extract
2 eggs
2 1/2 cup all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
12 oz dark chocolate chips
1 pound bacon, fried until crispy, patted dry, and diced and, if you're anything like me, fry some extra bacon for snacking.

Sift together the flour, baking soda, and salt. Set aside.

Cream the butter and sugars in the bowl of an electric mixer until smooth. Add the eggs, one at a time, scraping the bowl after each one. Add the vanilla extract.

Add the flour mixture in thirds, mixing on low after each addition. Add the chocolate chips and bacon, mixing just until incorporated.

Chill the cookie dough for at least an hour before baking.

Preheat the oven to 350F.

Use an ice cream scoop or spoon to place balls of dough equal to about 2 tablespoons, evenly spaced on an ungreased cookie sheet. Leave 3 inches between each one.

Cook 12 to 15 minutes, until just golden brown on top. Let cool slightly on the pan, then move to a cooling rack.
