Cook's Corner - February Challenge - Bacon
I know it says February up there and it's the middle of June. I'm a little behind, but still fully enjoying these challenges. In my defense, I did actually make my first bacon in February but it disappeared very very quickly. A large portion of it was eaten within minutes of coming out of the oven. We cut small slivers off and ate them as fast as we could without burning our mouths. The rest vanished in a single breakfast. Thick slices fried and eaten with pancakes. Maybe the most humerous moment of all was the expression on the butchers at the Chinese market, pretty white girl ordering 5 pork bellies in her best chinese, he understood perfectly but just couldn't believe that was really what I wanted.
The second batch had a more exciting life. We cold smoked it with hickory in our new Big Green Egg. Half of it we ate for breakfast, and the other half was transformed into Bacon Chocolate Chip Cookies!
